Luke Mangan has never been the kind of chef who disappears into the kitchen and stays there. As one of our great culinary entrepreneurs, he has built restaurants across Australia and Asia, cooked for royalty and rock stars, and turned his name into a hospitality brand. Now, with a suite of new experiences launching at Luke’s Kitchen in Sydney, Luke is bringing the intimacy back to dining: one butcher’s block, one dessert trolley and one chef’s table at a time.

“The biggest lesson I’ve learnt is that dining isn’t just about the food. It’s the team, the lighting, the wine list, table arrangements, and the music, it all adds to the experience. Hospitality is always evolving and if you stop learning or listening, you will be left behind,” Luke says.

Chef’s tables are having a moment in Sydney, and Luke Mangan’s iteration at Luke’s Kitchen may be the most exclusive of all. Available just once a month, on the first Friday of each month from tomorrow (August 7), the experience puts guests beside the open kitchen for a custom tasting menu curated and personally presented by Mangan himself.
Drawing from the current menu as well as celebrated dishes from his archive, the Chef’s Table seats between two and 12 guests at $150 a person. It’s the kind of evening where the food is only part of the story.

“Diners are ready for experiences again. They want to feel connected to the food, the chefs, the story behind what’s on the plate. That’s what the Chef’s Table is about: direct engagement with me and the team, a showcase of incredible produce and a memorable dining experience. I always come back to dishes that people still talk about years later, the ones that have stood the test of time. But I do like to revisit them with fresh eyes, to see how I can evolve them with new produce. It’s not nostalgia for nostalgia’s sake. The gooey chocolate tart is a good example, it’s been on the menu for years, but the garnishes change with the seasons, so it’s never quite the same dish twice.”

“Sydney has always loved great food, but people are looking for more. They want an experience they can share with their friends and family. A little theatre, whether it’s the dessert trolley or carving tableside with Luke’s Cut, brings energy and excitement to the room.”

Each Tuesday from 5pm, Mangan wheels out his own butcher’s block tableside and puts the decisions entirely in the hands of his diners. “When we wheel out the butcher’s block for Luke’s Cut, people have been absolutely loving it! As soon as the first plate of steak goes down, the room buzzes. What still gets me after all these years is how much people appreciate that personal touch. Not just the theatre itself, but the interaction that comes with it: the conversation, the questions, and the stories behind the produce – those moments really stay with people.”
The Chef’s Table, the Dessert Trolley and Luke’s Cut tell a story about where fine dining is heading in Sydney: towards connection, theatre and personal touch. True to character, Mangan is ahead of the curve.
